Kscope Recipes #1: Breakfast Bake

Breakfast Bake Recipe by Sofia Baltz

Introducing Kscope Recipes, a weekly column bringing students easy and delicious recipes to try within their busy schedules.

Ingredients needed:

  • 6 eggs
  • 1/2 cup of milk
  • 4 TJ’s Hashbrown Patties
  • 1 cup frozen broccoli
  • 1/2 cup TJ’s frozen pepper & onion mix
  • 1/2 lb. breakfast sausage, browned
  • 1 cup shredded sharp cheddar
  • Salt & pepper
  • Cooking spray

Instructions:

  1. Preheat oven to 375 degrees. Thoroughly spray an 8x8in. pan with cooking spray and place the hashbrowns on the bottom.
  2. Add broccoli, peppers & onions, and browned sausage over the hashbrowns.
  3. Whisk the eggs, milk, and a pinch of salt and pepper until smooth. Pour into the pan.
  4. Sprinkle the cheddar on top and cover the pan with foil. Bake for 30 minutes. Remove foil and cook for an additional 30 minutes, or until egg is cooked through.
  5. Cut into 6 pieces. Enjoy!
